<li>Whisk the eggs.</li>
<li>Fry the potatoes in oil till golden brown.</li>
<li>Take a non stick pan and add olive oil.</li>
<li> Saute the onions.</li>
<li>Add potatoes in the pan and saute.</li>
<li>Add whisked eggs in the mixture and stir.</li>
<li>Cook the omelette from both the side till golden brown.</li>
<li> Take out from pan.</li>
<li>Serve hot or cold on platter with mayonnaise on side.</li>
